It sounds like you are talking about stepwise regression or regression with multiple enter blocks rather than hierarchical regression. Is that right? If so, each block output includes all the variables that have been entered and are still in the equation. Since coefficients of the same variables in previous blocks will change when new variables are added, this is necessary.
For classifying new cases, you can save the model as xml and use the Scoring Wizard on the Utilities menu, but if you want to write different scoring code, perhaps outside Statistics, you can just take the equation from the last stage you want as the complete specification.
